How we do dinner during busy weeks

It’s one of those weeks around the Lewis house where we just have a lot going on.

I’ve really been busy with the Art side of my business and I have a huge sale going on tomorrow night over on my Facebook Page.

Jaime and I also have two different interior faux painting projects we are working on for clients.  I’ve been driving out to work from her studio a lot this week and because of that just haven’t really been able to put a lot of effort into cooking dinner.

I mean, not that I even can put that much effort into it, we do have 2 toddlers and 1 eight year old and all 3 have a limited menu that we have to choose from.

I recently jumped on the pressure cooker bandwagon ( thank you for converting me Jaime) and it is a life-saver for weeks like this.  And there are so many recipes I can use it for that include my picky boy’s.

I found this recipe by The Vanilla Tulip just a few weeks ago for Mexican Beans.  Surely you know me enough by now that you are aware of my deep deep love for Mexican food.  It’s legit.  These beans by The Vanilla Tulip are Ah- maze – ing!  All of my boys ate them and loved them.  And there was enough left-over for me to freeze.  This is what we’ll be having for dinner tomorrow night.  I like to throw a bunch of cilantro on mine.  So yum!

Another no fail easy go-to recipe on a week like this is macaroni and cheese.  I like to make it from scratch verses the box or the microwave because True has a wheat and soy allergy.  I can easily substitute gluten free elbow noodles in this recipe and you would never know. 

Side note for my Gluten Free friends… I think I may have tried almost all the GF pasta’s and I have found The One.  In our house we use Ronzoni pasta only now. I get ours here.  Even my two big guys don’t even know that it’s Gluten Free.

You can cut this recipe in half if you want just enough for one night or are eating it as a side but I like to make the whole amount so my little’s can eat it for lunch during the rest of the week.
