Yesterday I shared that I had finally found the yummiest recipe for chicken tortilla soup on my Instagram Stories.
Mexican Food is my absolute favorite food. I could eat it every day.
Jaime and I are always on the hunt for the best chicken tortilla soup when we are working and need to eat out. We usually like to try a different restaurant to see how their soup rates or we will drive to our favorite location.
Now that my family is eating Gluten Free and I’m working on getting back into shape I’ve been searching for the perfect recipe to make it at home. While researching new Gluten-Free recipes online, I found this recipe on Stupid Easy Paleo.
I did a few things different, per Jaime’s guidance (she’s a natural cook – Me, not so much.) I boiled a whole chicken and used my own broth. I also wanted a larger quantity so that I could eat it for lunch through-out the week, so I used more broth and more flavoring. After combining all the ingredients and letting it simmer all day, I felt it needed more seasoning. I added more salt, cumin and cilantro.
Now, I hear some people HATE cilantro. I just don’t see how that could possibly be true. If it’s true for you, you would omit adding this, but I can’t tell you how much better it is with cilantro. The more the merrier! I only tell you the truth.
Now onto toppings!
Toppings are just as important as the main soup ingredients when eating Chicken Tortilla Soup. I always top my soup with the following…
- pico de gillo
- avocado
- lime
- sour cream
- cheese – shredded queso (unless you are doing Paleo than you won’t want the dairy)
- tortilla chips
- and of course…more cilantro
